As a part of BlendFest on the Coast last week, the Paso Robles CAB Collective hosted a blending seminar at the beautiful Cavalier Oceanfront Resort in San Simeon.
Winemakers Christian Tietje from Rotta Winery, Ben Mayo from San Antonio Winery, and Stewart Cameron from Ancient Peaks Winery, hosted the seminar along with David Wilson of Grape Encounters.
The seminar began with the winemakers presenting each of the five red Bordeaux varietals and discussing the various characteristics and flavor profiles of each varietal. Guests were given the opportunity to take notes and taste through each of the wines to learn what each varietal might contribute to a red Bordeaux blend. After tasting through the five single varietals, two red Bordeaux blends were sampled to show the outcome of blending certain varietals and percentages.
The second half of the seminar gave attendees the opportunity to create their own red Bordeaux blends based on what they had learned from the seminar. Each table worked together to create a blend and a name to be entered into a competition. David Wilson had the difficult job of tasting each blend, and choosing the winner. Each table’s blend was delicious and everyone had a great time!
